We made these for a MOPS meal making day. It gave those who haven’t made from scratch before the opportunity to learn.
Find a friend! You’re splitting a batch of dough between the two of you.
1 batch of dough makes 4 calzones (or 2 stromboli, or 2 loaves of bread or 2-3 pizza crusts)
2 cups warm water (warm, but not HOT to touch- hot water will “kill” the yeast)
1 package yeast (1 1/4 teaspoons)
1 1/2 Tablespoons oil
1 teaspoon salt
5-6 cups flour
additional seasonings, if desired (e.g. oregano, basil, onion, garlic, spagetti sauce seasoning packet, etc)
Combine all but 2 cups flour. Stir. Add flour and continue to stir until it becomes to hard to stir. Then start to knead the dough, add flour as needed. Knead until smooth and elastic- 5-8 minutes.
Lightly coat with oil and set aside to rise ’til doubled, about 1/2-1 hr.
Grease your baking sheet, or dust it with corn meal.
Once dough has risen, divide dough in half. Each half will make 2 calzones. Split dough in half again and spread dough into 2 circles. Let half of each dough circle hang off the ends of your baking sheet.
Fill the half of the circle on the baking sheet, then flip other dough half over top and seal edges of dough.
For Pizza calzone:
1/4-1/2 c sauce, 10-12 slices pepperoni, and 1-1 1/2 c cheese (4-6 oz). Other fillings if desired.
For Ham and Cheese calzone: 1/2-3/4 lb. chopped ham (1-1 1/2c)
(Others to try at home: add broccoli to ham and cheese. Make a chicken and vegetable version using cooked cubed chicken, peppers, onions, mushrooms and a little oil and seasonings.)
Use additional sauce for dipping if desired.
