Another MOPS make ahead meal. This makes 20 9×13 pans, so if you’re only making one or 2, adjust your ingredients! I think this originated from Taste of Home.
Stuffed Shells (20 meals)
10 boxes of shells (cook ahead) – each box makes 2 meals (This worked out to be about 18 shells each pan, if I recall correctly, but we ended up with a lot of extras. Check your pasta box, and maybe even count for sure how many are in an average box before you cook them).
10- 32 oz. containers of ricotta
2 5# bags grated mozzarella (1 bag in with ricotta, 1 to sprinkle on top)
10 eggs
pepper to taste
1/2 jar oregano
1/2 jar garlic powder
2 jars parmesan cheese
20 jars spaghetti sauce
Mix ricotta, mozzarella, eggs, seasonings, and 1 bottle parmesan in large bowl. Stuff shells with cheese mixture (do not over stuff) and place in greased pan (Put some sauce on the bottom of the pan first). Spoon sauce over shells and sprinkle with mozzarella and parmesan. Cover with foil and bake at 350 for about 40-45 min. when ready.
These freeze great and can be baked from frozen for about 60-70 minutes.
